Ingredients required for Matcha Muffins:

  • ¾ cup of sifted coconut flour
  • ¼ cup of arrowroot flour
  • ½ teaspoon sea salt
  • ½ teaspoon baking soda
  • 3 tablespoons Japanese matcha tea
  • 2 eggs
  • ⅔ cup egg whites
  • 2 tablespoons coconut sugar
  • 3 tablespoons maple syrup
  • 2-3 tablespoon lemon juice
  • ⅓ cup almond milk (unsweetened)
  • 2 teaspoons vanilla extract
  • ½ cup of plain Greek yoghurt
  • 1 tablespoon coconut oil (melted)

Steps of making:

  • Step 1: Preheat the oven to 350°F.
  • Step 2: Take a small bowl and add into it coconut flour, arrowroot flour, sea salt, baking soda, matcha powder and also the coconut sugar.
  • Step 3: Take all the other wet ingredients in a separate bigger bowl and beat them to make frothy.
  • Step 4: Now mix the dry ingredients into the wet ingredients so that they combine well.
  • Step 5: Put equal amount of batter into the muffin tins and place in the preheated oven and bake for about 20-22 minutes.
  • Step 6: Check whether they are properly baked or not by inserting a toothpick in them. If the toothpick have nothing sticked to them, then muffins are ready.
