Ingredients :

  • About 400g full-fat coconut milk of good quality (preferably can quality)
  • 2-3 tablespoons of Matcha green tea powder
  • 1 cup of unsweetened almond milk
  • ¼ cup of good quality dates
  • ¼ cup of honey(or you can also use maple syrup)
  • ¼ teaspoon of xanthan gum

Steps to make Matcha green tea coconut ice cream:

  • Step 1: Mix coconut milk, almond milk, matcha tea powder, dates and honey and blend them until they are well mixed with each other.
  • Step 2: Now add xanthan gum to the mixture and blend again. (You can adjust the flavor by adding dates, honey and Matcha tea powder as per your taste)
  • Step 3: Transfer the mixture to a mixing bowl and keep aside to get it chill. Now, pour it in a freezer safe container, cover it and freeze. Remember to whisk/stir after every hour to aerate. (You can also use an ice cream maker)
  • Step 4: You can also eat it as a soft serve after churning or you can also place it in freezer to let it hearden for about 5-6 hours.
  • Step 5: At the time of serving, you can garnish it with pomegranates, fruit compotes etc.
